“Zahiro” - Slow Natural Processing
“Zahiro” processing methods are unique, and the fermentation and flavor are also special. Coffee cherries with high sugar content are dried slowly at low temperatures and sun-dried on raised beds for about 10 days. The cherries are then placed in a plastic bag covered greenhouse to increase more natural sweetness through a slow natural process, creating a multi-layered flavor of fruits, wine, and honey.
