Anaerobic Enzyme Washed
The anaerobic enzyme washed process used in Rose Valley. They put the coffee cherry in a sealed container for low temperature fermentation 12-24 hours, then remove the peel and pulp, perform a low temperature anaerobic fermentation(control the oxygen, pH value and temperature in the container), where enzymes are added to aid the fermentation. After the fermentation is completed then drying.
